Happy Fathers Day: 4 simple recipes for dad

June is the month for honoring fathers, and while not everyone has a wonderful father, most have a male role model in their life. Whether he is your biological father, or one who loves you and cares about you unconditionally, take some time to honor this person influencing your life.

Fathers tend to be a bit more laid back on their day, so below are some simple suggestions for sharing a meal with dad.

Core 3 dozen jalepeno peppers, removing all the seeds. Stuff with Oaxaca cheese (found in the specialty cheese section at your grocer), then wrap a slice of bacon around the outside of the peper and grill until the bacon is done.

Southwest chicken (or steak) is an easy recipe. Lay meat in a baking dish sprayed with olive oil, season with any southwest blend seasoning, top with salsa and bake at 350 degress until done. Serve with cooked broccoli topped with cheese.

Chicken Cheesy Casserole is a complete meal. Combine the following ingredients in an oblong baking dish:

  • 5 cups cooked chicken (cubed)
  • 2 cups brown rice
  • 1 can cream of chicken soup
  • 1 can Campbells Nacho Cheese soup
  • 1 3/4 cups of water
  • 1 packet of taco seasoning

Mix ingredients well, cover with foil and bake for 25-30 minutes. Then, top with shredded sharp cheddar or Mexican cheese, baking an additional 5 minutes to assist in melting.

For a fresh, healthy dessert, layer in dessert cups or bowls the following:

  • 1 cup low fat vanilla yogurt
  • 1/4 cup berries
  • 1/4 cup walnuts
  • 2 tablespoons granola

Top with a dollop of whipped cream and serve.
